Kale....Cooked the Moroccan Way

If you are not a big fan of those greens, especially kale, I am here to put a new twist on the way you eat them, so maybe now you will like them! Today, I will be sharing with you the moroccan way of cooking kale called "Khobiza" or "Baqoola". It's so easy and very tasty! Let's start. *NOTE: Add also 1 tsp of ginger. Ingredients:

Kale ( as much as you would like!)

1 tomato

1 onion

1 tomato

1/2 of a preserved lemon (ca

n be found at any middleeastern market!)

1 tsp of salt

1 tsp of black pepper

1 tsp of tumeric

1 tsp of paprika

2-3 cloves of garlic (minced)

1 handful of cilantro finely chopped

2-3 tbs of olive oil

1-2 cups of water

Directions:

Wash kale very well with water and vinegar, drain. In a pressure cooker *or regular pot*, sauté onion, cilantro & garlic in olive oil, add kale, let it cook down. Add tomatoes, salt, pepper, turmeric, paprika, and water. If using a pressure cooker, allow to cook for about 10 minutes otherwise cooking for 15-20 min on med-high heat. Now, add a couple of thin slices of preserved lemon and let it cook another 5-7 min. Serve hot or cold as a main dish or appetizer. Bon appetite!

Asmaa's Cooking Tips:

As intimidating as using a pressure cooker might seem, it will become your BFF! Cooking with a pressure cooker in some recipes can cut the cooking time down in half.

Ginger, cinnomen & tumeric are in almost all Moroccan recipes! So have them handy.

Always becareful with the salt. It's better to have to add salt, because if you put too much you can't take it away!
