Tajine Recipe: Green Peas & Brussel Sprouts

Today, we are going to be making my all time favorite...Green Peas & Brussel Sprout Tajine! Tajines are a staple dish in Morocco( where I am from and grew up); I love any tajine recipe. Tajine's are so convenient because you can just dump everything together and let it cook for about 45 minutes to an hour and BOOM, you've got a meal FULL of flavor! Oh and did I forget to mention that Tajines are totally vegetarian & vegan friendly????? Yessssssss. For this recipe, you don't need to make it in a tajine, you can make it in a regular pot, but I have included the link below if you decide you want one (I promise it's worth it! Ingredients:
1 pound of beef or lamb (or can be omitted completely if you are a vegetarian!)
1 medium size onion finely chopped
1 preserved lemon (optional)
1 tablespoon of cilantro
1 tablespoon of tumeric
1/2 tablespoon of coriander
1/2 tablespoon of salt (adjust according to taste)
1 tablespoon of ground ginger
2 cloves of garlic
1 teaspoon of black pepper
1/4 of cup of olive oil
1/4 of cup of vegetable oil
2 cups of green peas
1 cup of Brussel Sprouts
Directions
Turn on your pot/tajine on low-med heat (if using a tajine please don't forget to use a heat diffuser! Link below as well). Drizzle some vegetable oil on your tajine, put meat & onions, spices and mix well. Sautee for about 5 to 10 minutes.
Now it's veggies time! Spread green peas over meat, then brussle sprouts then cover with parchment paper (if using tajine pot only!) and cover with lid. Check from time to time until sauce builds, us a spoon to take the sauce and spread it over the veggies so they can also take on the flavor of spices. Close tajine again and allow to cook. Half way through the cooking, at about 30 minutes, put your preserved lemons (sliced) & cilantro on top. Cover again (add Boiling water if necessary if you see the sauce drying out). Let cook until meat is tender. Serve with warm baguette bread on the side. Bon appetite!
